Throughout the years, Hugh has built up a solid reputation nationwide in the butchery business through his creativity with pork products.
He has travelled much of Europe in order to learn more different products and production methods, from the French Boudin Noir to the Spanish Morcilla, picking up many tips and tricks along the way.
Hugh’s multi award-winning Smoked Black Pudding, symbolises his passion, his roots, his days back at his mother’s kitchen and is his most exciting and innovative product to date.

Dry Cured Back Rashers
Our Dry Cured Back Rashers are handcrafted and salted perfection in our own Smoke house in Navan. Co. Meath.
Smokey Streaked Rashers
We sweet cure, salt cure and smoke our bacon all by hand in our Smoke House in Navan, Co.Meath. The curing of meat does not have a time limit. It can take a couple of weeks, months or even years , depending on what result you are looking for. These streaky rashers were salted and left curing for 7days. Hung up in a dry room, the moisture is withdrawn. We then smoke the bacon piece for 2.5 hours over beechwood chips in our very own smoker.
