Bubba's Sweet Chilli Jammin
We are delighted to be able to present to you a brand new condiment that is going to be the next big thing on the Irish food scene.
Bubbas is made using a recipe that until now was a well-kept secret. The Bubbas, David, Stephen and Philip Hanley have been working to perfect their chilli jam and that’s where we came in.
When the Bubbas came to Great Northern Larder and asked us to make it for them, we thought it would be a piece of cake, or money for jam as it were. Instead it proved to be a very hard product to get right, but one that rewards mightily.
Bubba's has a very fragrant lemongrass and coriander top note, followed by a bite of red chilli, and a deep complex flavour from Asian fish sauce, soy sauce, and wine vinegar. It is all held together by a broad ginger base and a lovely sweet nutty texture. Try it on fish, meats, with cheese, or in curries
