Irish apple cider vinegar has a lovely sweet tang that brings amazing flavour and tenderness (acid tenderises meat) to pork in particular, but also lamb, fish, and large cuts of beef. Use it for spritzing to keep the meat moist as it cooks.
It goes without saying that a great quality Irish sea salt can change a meal. Salt is the secret ingredient for every BBQ dish. Use it for brining, marinating, and seasoning. Most of our dry rubs have no salt - this allows you to add your own to taste.
