Scotch BBQ gets its name from the generous dram of smokey Scotch whiskey in every bottle and the heat of a handful of Scotch Bonnet chillies in every batch.
Scotch BBQ is a Texas-style BBQ sauce that is designed to be mopped on glazed onto food as it cooks. Unlike Kansas style BBQ (the tomato-based thick sauce we are more used to in Ireland) Scotch BBQ will moisten the meat and add flavour as it cooks rather than just clump on the outside.
Use it on pulled pork, pork ribs, chicken, vegetables (in place of honey), cauliflower wings, chicken wings, or as a table condiment. Olive Deli in Skerries regularly use it in their pulled pork specials and the feedback we get is fantastic. We have literally bumped into complete strangers who have looked at our Great Northen Larder polo necks and declared "oh my god, I love your pulled pork roll in Olives". How can you beat that?
